How to Make Roasted Corn

Roasting corn is a simple way to bring out the best flavours of this summertime staple. It’s a great option for a quick and easy side dish, as well as a wonderful accompaniment to meaty grilled dishes like steak!

The first step is to shuck and clean each ear of corn thoroughly. This helps to ensure that the husks don’t get burned while cooking, and also removes any extra silks.

For best results, you can use fresh corn, but you can also make this using frozen corn if necessary. However, you will need to increase the roasting time to compensate for the extra moisture in frozen corn.

To prepare your corn, preheat the oven to 400 F / 200 C. Spread the corn on a baking sheet in a single layer and drizzle with olive oil. Season with salt, pepper, and garlic powder to taste. Turn the corn over once or twice during cooking to help the kernels brown evenly.

This is an easy and delicious side dish that is perfect for a family meal or to serve as an appetizer at a party! You can even make it ahead of time, then refrigerate it to enjoy later.

You can use any type of fresh herb to flavour the roasted corn, such as rosemary or thyme. You can also use a dash of cayenne pepper to add a spicy kick!

Another great addition to this side dish is melted butter, which can be used instead of the cooking oil. It helps to keep the corn from sticking, and gives it a smooth and creamy texture.

To serve, squeeze the juice of half a lime over each ear of roasted corn or run the zest of one lime, flesh side down, across the length of each ear of roasted corn. Sprinkle with a little red pepper flakes or Aleppo pepper and enjoy!

Oven roasted corn on the cob is one of my favourite ways to eat corn. It is simple to prepare, requires minimal prep, and produces tender, flavorful, and caramelized corn.

It also tastes delicious served on the side with a variety of different toppings. Try these options:

Garlic Butter

A quick and easy way to add a touch of fresh garlic to your roasted corn is by spreading it on the ears before cooking! You can either make this yourself or purchase a ready-made version at your local grocery store.

Then, roast the corn in the oven for about 20 minutes while stirring every few minutes to help it brown evenly. This will also ensure that all of the kernels get cooked, so that they are all sweet and tender.

If you’re using frozen corn, thaw it in the refrigerator for at least 20 minutes before cooking. Otherwise, the roasted corn will have a tendency to steam instead of caramelizing.

You can serve your roasted corn on the cob with other toppings such as pesto, herby yogurt, or fresh herbs. You can also mix the roasted corn with other ingredients such as sour cream, cream cheese, or mayonnaise to create an even more unique snack!
